a squashy cake! recipe from here, although I used regular pumpkin because my mother said that the japanese kind is hard to peel. this was my first time baking with ELECTRIC tools!! I used a handheld electric mixer (because my mom's stand mixer looks weird and big and scary) and oh my gosh, beating those egg whites was SO EASY. no more hour-long egg-beating marathons for me!
the cake is delicious, by the way. highly recommend the recipe to any and all pumpkin lovers. and cake lovers. and food lovers. it's a cake for lovers. ♥
